Scott Volpe shows us how to toss pizza dough
Scott Volpe, owner of Fiamme Pizza, is a pizza dough tossing world champion.
He shared with us the perfect recipe for Trick Pizza Dough:
- 1,000 grams water
- 2,000 grams high gluten flour
- 60 grams salt
- 25 grams olive oil
Mix the dough for 10 minutes until it is tight and holding together. Portion the dough into 200 gram dough balls and place in the fridge. After 1 hour place two dough balls together and roll into a circle with a rolling pin.
