Honey-Bourbon Beer Can Chicken is the perfect way to prepare chicken on the grill. The secret is the beer that’s placed in the cavity of the bird. It makes it really juicy inside.

Here’s what you need and how to do it.

What You Need

  • Dark brown sugar – 2 tbsp.
  • Kosher salt – 1 tbsp.
  • Poultry seasoning – 1 tbsp.
  • Dried thyme leaves – 1/2 tsp.
  • Crushed red pepper flakes – 1/2 tsp.
  • Garlic powder – 1/4 tsp.
  • Freshly ground pepper – 1/4 tsp.
  • 1 {4-lb} whole chicken
  • Vegetable oil – 1 tbsp.
  • 1/2 {12-oz} can of beer
  • Honey-Bourbon Glaze

Preparation and Cooking

Soak the wood chips in water for 30 minutes. Drain. Place the chips in heavy-duty foil & make a packet. Poke a few holes in the foil. Set aside.

Stir together the first 7 ingredients in a small bowl. Set aside. Remove the giblets & neck from the chicken cavity, if necessary. Rub the oil over the surface of the bird. Sprinkle the brown sugar mixture over the chicken.

Build a fire with charcoal. Add the packet of wood chips to the grill or smoker. Position the chicken over the beer can & place directly on the grate over indirect heat, about 225 to 275 degrees. Cook 1 hour & 15 minutes or until an internal temperature registers 180 degrees.

Brush the chicken with the Honey-Bourbon Glaze & cook, covered, an additional 10 minutes. Let stand 10 minutes. Slice & serve.

Honey-Bourbon Glaze makes about 1/3 cup
To make it, take 3 tbsp. honey, 1 tbsp. bourbon, 1 tbsp. Dijon mustard, and 1 tsp. of fresh lemon juice. Stir together all of the ingredients. Use as directed.
