Gluten-Free Spiced Pumpkin Seed Waffles From The Gourmet Girls

The Gourmet Girls showed us how to make this scrumptious fall treat.


First you start with the spiced pumpkin seeds:

4 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon chipotle
1/2 teaspoon ground cinnamon
2 tablespoons sugar
2 teaspoon salt
4 cups pumpkin seeds

Melt the butter in a lg sauté pan over low heat. Add the remaining ingredients and stir to combine. Add pumpkin seeds. Saute until lightly toasted . Cool completely to
room temperature.

Pumpkin Seed Waffle Recipe


  • 1 cup gluten free pancake/waffle mix
  • ¼ cup water
  • ¼ cup pureed pumpkin
  • 1 egg
  • 2 tablespoons spiced pumpkin seeds,

Blend all above ingredients together until batter is smooth. Pour into heated and greased waffle iron, bake for 6-8 minutes.
