Breakfast (or Anytime!) Tacos Tocino

MAIN INGREDIENTS

  • 8 regular size corn tortillas
  • 1 pound thick sliced bacon
  • 1 medium red onion, diced
  • Salt
  • 2 cups minced cabbage
  • 1 cup diced tomato
  • 8 avocado slices
  • 2 TB chopped fresh cilantro
  • Seis Sauce (Chipotle Aioli)

DIRECTIONS

  • Cut uncooked bacon strips into half inch pieces. Add bacon to a cold sauté pan then turn on the heat to medium-low. Cook bacon until the fat is rendered and is crisp to your liking, stirring occasionally.
  • Remove bacon with a slotted spoon and drain on a paper towel covered plate. Set aside.
  • Reserve about 2 tablespoons of bacon fat in the pan and turn heat up to medium-high. Add diced onion and salt to taste. Cook onion until translucent and edges begin to brown lightly.
  • Add cooked bacon back into pan and stir to combine caramelized onions and bacon together. Turn off heat.
  • Spoon bacon and onion mixture into warmed tortillas, top with Seis Sauce or a chipotle aioli, cabbage, chopped cilantro, tomato and an avocado slice.
