The Gourmet Girls shared with us the secret to their Grilled Tuna Sandwich
- 1 lbs Albacore White Tuna (chunked and drained)
- 1/2 cup mayonnaise
- 3/8 c finely chopped red onion
- 1 T lemon juice
- 3/ 4 cups chopped celery
- 2 T sweet pickle relish
- 1 T lemon pepper seasoning
- ¼ sliced avocado
- 1 T pickled onions
- 4 slices gf multi grain bread
- 2 slices cheddar cheese
In a medium bowl, combine first seven ingredients, mix well. For pickled onions:. 3 large red onion sliced, 2 cups water, 1cup vinegar, 1 tsp salt, ¼ cup sugar. Bring all but onions to boil, pour over onions and let sit for at least 4 hours.
Heat grill or skillet, place bread srices on surface. Top each piece of bread with a slice of cheddar cheese. Add scoop of tuna to taste, avocado slices and pickled onions. Put bread together to form two sandwiches and grill on both sides until golden.
