Here is the recipe to the Gourmet Girls Gluten-Free Pumpkin White Chocolate Chip Cookies:

Ingredients: 

  • ½ cup butter
  • ½ cup shortening
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups all purpose gluten free baking flour
  • 1 ½ teaspoons xanthan gum
  • ½ cup gf oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup pumpkin puree
  • 1 ½ cups white choc chips
  • 1 teaspoon salt

Directions:

In mixing bowl cream butter, shortening and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, oats, soda, cinnamon and salt, stir into creamed mixture alternately with pumpkin. Fold in chips
Drop by teaspoons on greased baking sheet and bake at 350 for 12-13 minutes or until lightly browned.
