Gourmet Girls Gluten-Free Irish Soda Bread Recipe

The Gourmet Girls Came By The Studio to Show Us How To Make This Irish Staple.

INGREDIENTS:

  • 2 CUPS GLUTEN FREE ALL PURPOSE FLOUR
  • 3/8 CUP WHITE SUGAR
  • ½ TEASPOON SALT
  • ½ TEASPOON BAKING POWDER
  • ½ TEASPOON BAKING SODA
  • 1 TEASPOON XANTHAN GUM
    1/8 CUP SHORTENING
  • 1/8 CUP BUTTER AT ROOM TEMPERATURE
  • ¾ CUP RAISINS
  • ¾ CUP BUTTERMILK AT ROOM TEMPERATURE
  • 2 EGGS AT ROOM TEMPERATURE

DIRECTIONS:

  • PREHEAT OVEN TO 350.
  • GREASE TWO 5 INCH ROUND CAKE PANS STIR TOGETHER FLOUR, SUGAR, SALT, BAKING POWDER AND SODA AND XANTHAN GUM IN LARGE BOWL.
  • USING A PASTRY CUTTER, CUT IN BUTTER AND SHORTENING AND STIR IN RAISINS.
  • IN ANOTHER BOWL, WHISK BUTTERMILK AND EGGS TOGETHER, LIGHTLY BEAT MIXTURE INTO FLOUR
  • MIXTURE. PLACE THE DOUGH IN PREPARED PANS.
  • BAKE IN PREHEATED OVEN 30 MINUTES UNTIL BREAD HAS RISEN AND TOP IS GOLDEN BROWN.
  • COOL FOR TEN MINUTES, REMOVE FROM PANS AND SERVE WARM.
