The Gourmet Girls Shared their recipe for their famous cupcakes with us.
The Gourment Girls showed us this great recipe for Gluten-Free Vanilla Cupcakes
- 1 c granulated sugar
- 2 large eggs
- 1 ¼ cups gluten free flour blend
- ¼ tsp salt
- 1 ½ tsp baking powder
- ½ tsp xanthan gum
- ½ c rice bran oil
1 tsp vanilla extract
Frosting of your choice
Preheat oven to 350. Line 12 cup cupcake baking pan with paper liners.
Beat sugar and eggs in large bowl at medium speed for 1 minute. Add flour baking powder, xanthan gum, oil, milk and vanilla Beat at medium speed for 1 minute.
Pour batter into cupcake pan, Bake for about 20 minutes or until center springs back when lightly touched. Cool on rack for five minutes and remove from pan. Cool completely before icing.
Cut small divot from top of cupcake and fill with your favorite filling before icing if desired.
