Gourmet Girls Gluten-Free Easter Quiche

The Gourmet Girls  showed us how to make this great Easter dish and it's gluten-free.



  • 1 ¼ c all purpose gluten free flour blend
  • 1 T sugar
  • ½ tsp xanthan gum
  • ¼ tsp salt
  • 6 T cold unsalted butter cut into six pieces
  • 1 egg
  • 1 tsp vinegar
  • 1 tsp water


Mix flour, sugar, xanthan gum and salt in large bowl of electric mixer. Add butter and blend until
Add egg, vinegar and water. Mix on low speed until dough holds together. Form into a ball and place
between two sheets of plastic wrap. Roll out dough, remove top sheet of plastic and fit into pie pan.

Quiche Filling


  • 6 eggs
  • 1 c heavy cream
  • ½/ c milk
  • ¼ tsp each salt and pepper
  • 1/8 tsp nutmeg
  • 1 cup cooked diced asparagus
  • 1c diced ham
  • ¾ c crumbled swiss cheese


Place asparagus in unbaked pie shell, top with diced ham, and cheese. Mix
eggs, cream, milk and seasonings together until well blended and pour into pie shell. Bake at 350 for
30-40 minutes or until set in the center.
