The Gourment Girls showed us this great recipe for a popular breakfast dish, which they serve all day!
2 large eggs
1 cup cooked and diced baked potato
1//3 cup each diced barn, mushrooms, onions and peppers
¼ cup shredded cheddar cheese
2 T cooking oil
Heat oil in skillet over medium heat and fry potatoes until brown and crispy. Add ham and vegetables and continue cooking until softened. Transfer to plate. Using same skillet cook eggs as desired on place on top potato mixture. Sprinkle with cheese and enjoy.
