Gluten-Free Christmas Morning Quiche Recipe

The Gourmet Girls Came By The Studio to Show Us How To Make This Great Christmas Morning Gluten-Free Dish

1 ¼ c all purpose gluten free flour blend
1 T sugar
½ tsp xanthan gum
¼ tsp salt
6 T cold unsalted butter cut into six pieces
1 egg
1 tsp vinegar
1 tsp water
Fix flour, sugar, xanthan gum and salt in large bowl of electric mixer. Add
butter and blend until
Add egg, vinegar and water. Mix on low speed until dough holds together.
Form into a ball and place
between two sheets of plastic wrap. Roll out dough, remove top sheet of
plastic and fit into pie pan.

Quiche Filling:
6 eggs
1 c heavy cream
½/ c milk
¼ tsp each salt and pepper
1/8 tsp nutmeg
10 cherry tomatoes
2 c spinach leaves
¾ c crumbled feta cheese
Place spinach in unbaked pie shell, top with cherry tomatoes sliced in half
and crumbled feta. Mix
eggs, cream, milk and seasonings together until well blended and pour into
pie shell. Bake at 350 for
30-40 minutes or until set in the center.
