Gourmet Girls came the studio to show up how they make this yummy dish.
ORGANIC MIXED GREENS SPRING SALAD
6 cups organic mixed greens, washed
2 pears, cored and thinly sliced
4 oz brie cheese cut in 4 wedges
1/2 c dried cranberries
1/2 c spiced pumpkin seeds (recipe follows)
3 parts high quality olive oil to 1 part balsamic vinegar whisked together to form emulsion
Toss greens, cranberries and pumpkin seeds with dressing and divide among four plates
Arrange pear slices around edge of plate and add a wedge of brie.
Spiced Pumpkin Seeds:
4 T olive Oil
1 tsp ground cumin
1 tsp chili powder
1/2 tsp chipotle
1/2 tsp ground cinnamon
2 T sugar
2 tsp salt
4 c pumpkin seeds.
Heat olive oil in a large saute pan over low heat.
Add all but seeds and stir to combine.
Add seeds and saute until lightly toasted.
Cool completely to room temperature.
