Gourmet Girls Gluten Free Bistro makes these amazing gluten-free cupcakes every year to promote Breast Cancer Awareness month. In fact, they have partnered with Making Strides Against Breast Cancer Tucson and will donate proceeds from the sale of these cupcakes all month long! The Gourmet Girls have been generous enough to share their recipe, in case you want to make your own at home.
1 c granulated sugar
2 large eggs
1 ¼ cups gluten free flour blend
¼ tsp salt
1 ½ tsp baking powder
½ tsp xanthan gum
½ c rice bran oil
½ c milk
1 tsp vanilla extract
2 drops of pink food coloring
Frosting of your choice or melted pink/brown white chocolate for dipping
Pink mini marshmallows
Preheat oven to 350. Line 12 cup cupcake baking pan with paper liners.
Beat sugar and eggs in large bowl at medium speed for 1 minute.
Add flour baking powder, xanthan gum, oil, milk and vanilla. Beat at medium speed for 1 minute.
Pour batter into cupcake pan, Bake for about 20 minutes or until center springs back when lightly
Cool on rack for five minutes and remove from pan. Cool completely before icing or dipping
in white chocolate.
Top with mini pink marshmallow.
