The folks for Mt. Lemmon Ski Valley came by the studio to talk about their Octoberfest festival as well as their words of advice for making the perfect strudel. Here’s the recipe:
¼ cup sugar
2 teaspoons cinnamon
Frozen puff pastry sheets
2 eggs – beaten to make egg wash
Peel and wedge 3 apples and place them in a small sauce pan. Add sugar and cinnamon. Simmer for 10 minutes then let cool. Once the filling is cool, drain off the excess liquids.
Let puff pastry thaw to about room temperature (you want to be able to work with it, but you don’t want it too warm). Place puff pastry on a parchment paper-lined pan and cut even strips down both sides about a third of the way into the pastry. Place apple filling down the middle of the puff pastry avoiding the cuts you made.
Fold up both ends of the strudel to hold in the apples, then carefully braid the pastry closed pulling strips from either side across. Cut off excess when you reach the end. Brush thoroughly with egg wash (made by beating eggs until smooth).
Bake for 20 minutes at 400 degrees. Turn pastry around and bake another 20 minutes until completely golden brown.
